真核細(xì)胞 eukaryotic cell 指含有真核(被核膜包圍的核)的細(xì)胞。其染細(xì)菌體數(shù)在一個(gè)以上,能進(jìn)行有絲分裂。還能進(jìn)行原生質(zhì)流動(dòng)和變形運(yùn)動(dòng)。而光合作用和氧化磷酸化作用則分別由葉綠體和線(xiàn)粒體進(jìn)行。除細(xì)菌和藍(lán)藻植物的細(xì)胞以外,所有的動(dòng)物細(xì)胞以及植物細(xì)胞都屬于真核細(xì)胞。由真核細(xì)胞構(gòu)成的生物稱(chēng)為真核生物。原始真核細(xì)胞大約在12~16億年前出現(xiàn),現(xiàn)存的種類(lèi)繁多,有些真核細(xì)胞極為原始,如渦鞭毛蟲(chóng)(甲藻),真核生物包括大量的單細(xì)胞生物或原生生物,全部多細(xì)胞生物。凡是真核細(xì)胞構(gòu)成的有機(jī)體現(xiàn)在統(tǒng)稱(chēng)為真核生物。細(xì)胞一般比較微小,需要用顯微鏡才能看見(jiàn),通常以μm計(jì)算其大小。但也有少數(shù)例外,如一些鳥(niǎo)卵(不包括蛋清),直徑可達(dá)幾個(gè)cm。細(xì)胞的形態(tài)結(jié)構(gòu)與機(jī)能也是多種多樣的(圖1—1)。游離的細(xì)胞多為圓形或橢圓形,如血細(xì)胞和卵;緊密連接的細(xì)胞有扁平、方形、柱形等;具有收縮機(jī)能的肌細(xì)胞多為紡錘形或纖維形;具有傳導(dǎo)機(jī)能的神經(jīng)細(xì)胞則為星形,多具長(zhǎng)的突起。細(xì)胞雖然形形細(xì)菌,但是它們?cè)谛螒B(tài)結(jié)構(gòu)與機(jī)能上又有共同的特征。[1] 
由于結(jié)構(gòu)、功能和所處的環(huán)境不同,各類(lèi)細(xì)胞形態(tài)千差萬(wàn)別,有圓形、橢圓形、柱形、方形、多角形、扁形、梭形,甚至不定形。
原核細(xì)胞的形狀常與細(xì)胞外沉積物(如細(xì)胞壁)有關(guān),如細(xì)菌細(xì)胞呈棒形,球形,弧形、螺旋形等不同形狀。單細(xì)胞的動(dòng)物或植物形狀更復(fù)雜一些,如草履蟲(chóng)像鞋底狀,眼蟲(chóng)呈梭形且?guī)в虚L(zhǎng)鞭毛,鐘形蟲(chóng)呈袋狀。
高等生物的細(xì)胞形狀與細(xì)胞功能和細(xì)胞間的相互關(guān)系有關(guān)。如動(dòng)物體內(nèi)具有收縮功能的肌肉細(xì)胞呈長(zhǎng)條形或長(zhǎng)梭形;紅細(xì)胞為圓盤(pán)狀,有利于O2和CO2的氣體交換。植物葉表皮的保衛(wèi)細(xì)胞成半月形,2個(gè)細(xì)胞圍成一個(gè)氣孔,以利于呼吸和蒸騰。細(xì)胞離開(kāi)了有機(jī)體分散存在時(shí),形狀往往發(fā)生變化,如平滑肌細(xì)胞在體內(nèi)成梭形,而在離體培養(yǎng)時(shí)則可成多角形。
大小
一般說(shuō)來(lái),真核細(xì)胞的體積大于原核細(xì)胞,卵細(xì)胞大于體細(xì)胞。大多數(shù)動(dòng)植物細(xì)胞直徑一般在20~30μm間。
